feat(stellar): populate GetTransaction status, tx hash, and result XDR fields

[Krish-vemula]

• Rewrite stellarService.GetTransaction to populate Status, TxHash, ResultXDR, ResultMetaXDR, and pointer fee/ledger fields.
• Return a proper GetTransactionStatusNotFound response (with TxHash)
