SRVOCF-1099: switch to CI variant FBC image and remove IDMS

Summary

• Switch CatalogSource image from serverless-functions-fbc-422:latest to the -ci variant, which uses Konflux image references directly and requires no mirroring
• Remove ImageDigestMirrorSet from install.yaml - it was blocked by HyperShift's ValidatingAdmissionPolicy on ROSA HCP clusters
• Add CRD wait loop before applying KnativeServing, and note that the console pod restarts when enabling the plugin
