Support Node.js 27 #25983

Node.js 27 is in alpha since October 2026, and 27.0.0 is planned for April 2027. At first, we should run the alpha without prebuilt binaries (#25984): the CI jobs compile the native modules from source, because the ABI can change with each alpha. When 27.0.0 is released, the ABI is fixed for the full 27 line, and we can ship prebuilt binaries.

At 27.0.0

• sentry-javascript-profiling-node-binaries: add Node 27 to the build and test matrices, add the ABI branches in src/index.ts, release
• sentry-javascript-node-native-stacktrace: the same, release
• sentry-javascript: bump @sentry/node-cpu-profiler and @sentry/node-native-stacktrace, replace '^27.0.0-0' with 27 in build.yml, remove continue-on-error and the "Compile native modules" step, add 27 to the version check in packages/profiling-node/src/integration.ts
• sentry-docs: update the list of prebuilt binaries in platform-includes/profiling/node-profiling/javascript.mdx (Node 26 is also missing)
