This PR adds support for Python 3.14 and drops support for Python 3.10. See this page, where they put 3.10 in the unsupported table, with an end-of-life date of October 1st this year. Total coincidence that I stumbled upon this just a few days after haha.

I also simplified the tests in test-bdk-ffi-latest.yaml because a breaking API change in bdk-ffi fails on every platform anyway and Linux is the fastest runner.

cc @andreasgriffin please let me know if you would prefer I keep support for 3.10 for longer!
