This is a fixup of the release issue template (somehow I learn something new every time I use it), and a bump of the lockfile. I also kept only our lowest and highest supported Python versions for tests, because we were running so many tests ever time (every Python version (4) for every platform) and they never really produced anything different from each other. Anyway I kept 2 versions per platforms.
I will probably work on a PR that will add Python 3.14 in the tests and our releases, and remove 3.10 since it is loosing Long Term Support at the end of the month (Python versions are supported with security fixes for 5 years).
