Clean up stale references to Theia repo after migration #8

User Story Description

After the initial migration to the visor repo, clean up stale docs or references in the repo files. Update documentation links and stray references to the theia project or repo. Leave all issue and PR references to the old internal theia repo as-is (for historical reference, available internally only).

Acceptance Criteria

No references to the Theia repository outside issue or PR links.
Links to the visor repo are correct.
No files specific to the theia internal repo exist in the visor repo
