Survey CRS lives on the template, not SEG-Y ingest. In-place updates share a Zarr attr helper so v2 consolidated metadata cannot erase sibling keys. Co-authored-by: Cursor <cursoragent@cursor.com>

Implements a canonical CRS string that lives in the dataset metadata level. Also implements a way to safely update this information for existing MDIO files.
