WHY are these changes introduced?

We have transitioned the docs platform and need to clean up the old way of generating the docs

Fixes #0000

WHAT is this pull request doing?

removing .doc.ts files, pages are now handled by MDX inside
removing examples, those are now authored inside of shopify-dev

How to test your changes?

Post-release steps

All doc content that isn't contained in the generated types is now handled inside of shopify-dev.
