What does this PR do? What is the motivation?

Fixes DOCS-15144

Overhauls the AI Guard documentation so users can understand what AI Guard does, choose a deployment method, and find specifications in one place.

This first change (DOCS-15909) rewrites the AI Guard landing page to cover how AI Guard works, key terms, use cases, attack categories, supported agent surfaces and integrations, and specifications and limitations. It also retires the Get Started page, which overlapped with the landing page, and redirects its URL to Set Up AI Guard. Updates to the remaining AI Guard pages will follow on this branch.
