chore: switch Mintlify theme from almond to mint

Summary

• Switch the site theme in docs.json from almond to mint, matching Krea docs.
• Homepage mode is wide instead of frame. Mint does not support frame (that layout is Almond / Aspen / Luma / Sequoia only). wide keeps the sidebar and drops the TOC, which is the closest supported layout.

Draft on purpose so we can preview the Mintlify deploy before merging. Colors in docs.json are unchanged.

Test plan

• Check the Mintlify preview: homepage, a tutorial page, changelog, and a built-in node page.
• Light and dark mode.
• Confirm the homepage still looks acceptable without frame.
