docs: remove Upgrading to v2 section - #305

Remove the Upgrading section (overview, Swap v2 and Gasless v2 migration guides) from the docs nav and delete the pages. Add redirects so existing links, including older changelog entries, land on the Swap and Gasless API introductions.
